I am trying to get back into menu planning. I was doing well for a while, then we became too, too busy.Which means spending too much money eating out, or in our case, having food delivered. So, I am getting back into planning. For the weekend I have started making sure I have food for 3 meals on hand and waiting to see what is going on and preparing the food accordingly. We will either start the Sabbath Saturday night with a meal, or have it after church on Sunday. Occasionally, we close the Sabbath with the big meal on Sunday night. I have enjoyed doing that as well.
Monday- Baked chicken and potatoes with fresh asparagus
Tuesday- Pot Roast
Wednesday- Slower Cooker Pork Chops and Gravy with rice, and green beans
Thursday- Grilled Chicken, Cous Cous, Salad
Friday- Black Beans and Rice, Spinach Salad
Weekend Meals- Grilled London Broil, Smoked Ribs, Hot dogs roasted over the fire, broccoli salad, sweet potato fries, German Potato Salad, fresh asparagus.

For the black beans and rice, I am always reluctant to give it. It is one of those things that I just throw it together with whatever I have. I will try to give you someting here:
2 cans black beans
1 clove of garlic
cilantro
salsa (optional)
salt and pepper to taste
Rice
Olive Oil
Apple Cider Vinegar
Simmer the beans with the garlic, cilantro, salsa, and salt and pepper. Simmer them on low until it is all well blended, stirring occassionaly. While it is simmering cook the rice. Then Mix together 1 vinegar to 2 oils. I usually do 1/4 cup vinegar and 1/2 cup oil.then mix beans, oil mixture,and rice all together. Bruce like his with a little more vinegar so he adds more to his. It took me a few times of making this to get it just right for our tastes. Now it is one of our favorite cheap meals. Oh, if I have lime I put a little juice in. Bruce also likes to throw chopped raw onions on his.
