Menu Ideas

I need menu ideas. I also need to be more diligent at making our weekly menus. The more children we have acquired, I have found it more difficult to get dinner on the table if I did not have a well thought out plan. Too often I am getting to the afternoon with nothing planned, so we call in pizza. My husband told the children recently that he would actually throw up if he had to eat pizza one more time. I think that was the hint for me to get it together. Therefore, I am going to start posting a weekly menu. I know you could probably care less, but it will make me think through things at the beginning of the week. So, I am going to start with this week and we will see how long it lasts.

Monday Spaghetti and Salad
Tuesday Pizza (Oops! I didn't have a plan.)
Wednesday Grilled Pork Chops/Creamed Peas and Potatoes
Thursday Honey Mustard Grilled Chicken/Salad/Asparagus
Friday Date Night!!!
SaturdaySabbath Dinner Smoked Whole Chicken/Crash Hot Potatoes/Grilled Vegetables/Ice Cream with Raspberry Sauce

I made those Crash Hot Potatoes a couple of weeks ago, and they were a big hit here.

Ah, Julie...we are so alike. Except someone once told me to always have all the ingredient on hand for spaghetti for those times that you forget to plan...so it's spaghetti that Pete's sick of not pizza. This is a great idea. Maybe I'll do the same! :)

Those potatoes look really good. This will be our first time tying them.

Good idea with the spaghetti. At least it is less expensive than ordering enough pizza for all of us. There is something about pizza that makes my children's appetites turn into that of a full grown man who burns lots of calories.:)

I am going to try those potatoes! Yummy looking! I'm always looking for variety in starches because you wouldn't believe what it takes to fill up 6 boys (+1)! I would also love to have your recipe for Raspberry Sauce to go with the ice cream!?

Holly, I will get you the recipe later in the day. I am off to the store. We decided last night to entertain tonight. Thankfully, because of my plan :), it is doable and not that difficult to pull of at the last minute.

This is the recipe I use. I do not puree the raspberries. I just crush them a little. We like the chunks of berries. I have also done it without the wine if I did not have any on hand. Anne, if you are still reading, I lost your recipe. If it is any different let me know. I remember yours being delicious.


Raspberry Wine Sauce

* 1 1/2 cups dry red wine
* 1 pkg (300 g) frozen raspberries, thawed, strained and puréed
* 1/3 cup granulated sugar
* 1 tsp vanilla


Raspberry Wine Sauce

1. In large saucepan over medium heat, stir together wine, raspberry purée and sugar; bring to boil. Boil gently until reduced to ¾ cup, about 30 minutes. Remove from heat; stir in vanilla. Cover and refrigerate until chilled, about 1 hour. (Make-ahead: Refrigerate for up to 3 weeks.)

I use blueberries and strawberries, as well as raspberries in mine. I also use cinammon sticks while I cook it.
