Menu For the Week

Here is my menu for the following week. I am getting stuck in a rut. Any ideas??

Thursday Greek Chicken Sandwiches
Friday Sandwiches at our Church Psalm Sing
Saturday Cook-out with friends
Sunday Cherokee Chicken/Roasted Acorn Squash/Green Beans
Monday Shrimp Stir Fry/ Noodles with Peanut Sauce
Tuesday Hamburgers/Salad
Wednesday Maple Glazed Pork Chops/Sweet Potatoes/Green Beans

Can you share your recipe for Greek Chicken Sandwiches?

Sure.

-Chicken Breasts cut into strips (I actually use chicken pulled from a rotisserie chicken when I am in a hurry.)
-Shredded Lettuce
-Feta Cheese
-Chopped Tomatoes
-1 tsp Dried Oregano
-Tsatsiki Sauce (You can make your own. I get mine already made from Costco.)
-Pocketless Pitas

I layer everything in the pita and fold it over to make a sandwich. I believe it would be good with grilled or carmelized onions and peppers, but i have too many children who would pick them out, so I do not bother.

That sounds so good! I've never seen tsatsiki sauce in Costco. Where do you find it there?

Our Costco keeps changing everything around, but the last time I bought it ,it was in the refridgerated section with hummus, tapenade(sp?), and other kinds of dips.

I just did our menu/shopping this morning- so it is fresh in my mind.
Spaghetti, salad, garlic bread
Poppy seed chicken, rice, broccoli
Homemade pizza, salad
Taco soup in the crockpot, veggies & dip
Butternut squash soup, cheese toast, Salad
Chicken quesadillas, fruit
I hope that gives you some ideas!

Julie, I just made a really yummy lasagna that has black beans in it instead of meat. None of us like black beans but I wanted to try it because it is cheaper than meat and good for us and we all loved it and ate it-even Max. Let me know if you want the recipe.

Thanks, Julie! I'll look for it next time I'm Costco.

As for ideas, I'm in a rut, too. But lately we've been having breakfast at night about once a week, and my children love it. They also help cook it, which is a big help to me. We have eggs, bacon, biscuits, and grits.

Jenny, I would love your recipe. It sounds good. WE are black bean fans around here. By the way, congratulations on your girl. Isn't it fun to buy all the clothes. Enjoy it. When they leave the toddler stage everything looks like a teenager and it is a battle every time I shop! I have threatened to send Sarah with her dad. That usually straightens her out.

Julie, I will email it to you. I am having fun buying clothes and redecorating the nursery! After his initial comment of "But I don't want a sister" Max seems excited too. I am sure he won't always be!:)
